The Zampaglione family are proprietors of a historic grain farm in the Alta Irpinia area, also known today as the Irpinia of the East, with an altitude ranging between 800 and 900 meters and bordered by Alta Puglia and the region of Basilicata. After becoming one of the first organic farms in southern Italy almost 20 years ago and developing their agritourism business, the family invested in their wine-producing potential. Currently there are 2 hectares of vineyards, with 6000 plants per hectare, of the unique high-quality grape variety, Fiano. The Don Chisciotte vineyard is planted on three very different parcels with respect to exposure and soil type: from southwest to east on yellow tuff, dark clay and silica sandy soil. It often produces less than 4000 kg per hectare depending on the meticulous care put into selecting the grapes and the harsh climate. Don Chisciotte is aged and fermented in stainless steel tanks, macerating on the skins and resting on the lees until bottling. The close relationship with Vignaviva began during the 2010 harvest and is centered on our many years of experience in the production of macerated white wines. This collaboration has already turned into a common passion, a shared journey, and a deep fascination with the potential of Fiano in this challenging, surreal and unique area.
